Quinoa is the gluten-free “grain” that once fueled the Inca empire. The Incas recognized that Quinoa improved their health and stamina and regarded it as a sacred food. Today, nutritionists consider it  one of the best “superfood” in the world.

Quinoa (Chenopodium quinoa) is generally referred to as a grain, but is, in fact, the seed of a plant that is a relative of leafy green vegetables such as beets, chard, and spinach. Like its relatives, quinoa is a good source of dietary fiber. It is rich in essential nutrients, such as magnesium, manganese, iron, tryptophan, copper, riboflavin (vitamin B2), and phosphorous. Quinoa is considered a complete-protein food because it contains all nine essential amino acids. Quinoa is also gluten-free.

Quinoa is not only nutritious, it is delicious. Cooked quinoa is mild and buttery, and slightly crunchy. The most common quinoa seed is golden in color, but there are other varieties in colors such as red, black, pink, orange, and purple.  The darker-colored seeds have a more crunchy and earthy texture when cooked, as well as more fiber.

®8 Peppers (liquid Smoke or over hard wood) size matters

®12 oz. cheese (real or alternative)  

®1 oz. salt

®2.5 cups cooked quinoa (Sunshine Burger works well I think)

®Pumpkin Seeds Light toasted 6 oz. Farmers Cheese Garnish (see below)

After the pepper has been washed!  Use Olive Oil and Salt and Pepper and roast in the oven and or over hard wood. Worst case spray with the smoke! 

Make a “T” cut along the pepper and remove seeds gingerly! Stuff your mix in the entire pepper, add cheese if it’s to your diet any your taste concur.  (See site for other info)

Bake and or Smoke for 30 Min at 300 and brown if you like at 425 for the last 8 min. (HOT)

A Great Salsa is roasted and contains equal parts of Farm Fresh Tomatoes, Onions, Garlic and a Hot pepper (1).  When black turn twice and blend in food processor on plus setting.  (Aka the mother sauce)  Today we used Green Mountain Gringo.  IF you have a Green Mountain Gringo magnet under your chair you get a special gift today.

For Plating:  Consider using the large platter you never normally use as you should be making these for all your friends.    I love clay plates and or streamlined inspired plates that offer some panache for the unique flair.  Don’t forget you have a complete protein with the Quinoa and feel free to add the fairly raised sustainability harvested protein as you wish.  My garnish would feature Fried Yucca and a slice of Star fruit. Hearty Marascpone Sweet Potato Pie in Fillo.
2 packets  of Nuture Me  packets or 5 oz of cooked sweet potato.
2/3 Cup Apple Cider or optimized clean Water  
1/4 teaspoon Vanilla
1/2 cup Marcaspone or whipped Cream Cheese
4 Tsp Honey or  Wholesome brand Maple Agave.
